Nine Weeks, Then the Pivot
A Lyonnaise bouchon at Pavilion Kuala Lumpur — and the kitchen that became a relief kitchen when the city needed one.
In late 2020, Bouchon Enfin opened at Pavilion Kuala Lumpur — the most casual room in the wider Enfin family, designed to bring a Lyonnaise bouchon register to a Kuala Lumpur audience. The format was deliberate. Where Enfin (Menara Hap Seng) had carried fine dining at the highest register, Bouchon Enfin would carry the family-recipe bistro tradition of Lyon's Croix-Rousse district — regional French at accessible price points, cooked with the same discipline as the fine-dining room across town.
The plan was sound. The room was beautiful. The timing was unforgivable.
Nine weeks after Bouchon Enfin opened, the Movement Control Order shut its doors. What followed was the chapter that defines the restaurant on the public record: the kitchen pivoted, within a week, to the Be Kind programme — preparing and distributing dinner packets to organisations and communities in need across Kuala Lumpur, every week, for the duration of the closure.
The chapter is past-tense in active form. What endures is the example.
The Bouchon Register — A Lyonnaise Tradition in Kuala Lumpur
The bouchon is a defining French institution that originated in Lyon’s Croix-Rousse district — a small, family-run bistro serving regional Lyonnaise specialities at neighbourhood prices, in a register that prizes warmth, plain-speaking, and food cooked from grandmother’s recipes rather than menu architects’.
Prestige Online Malaysia carried Chef James Won’s framing of the concept under the title Chef James Won Reveals What Bouchon Enfin At Pavilion Kuala Lumpur Is All About. Thirst Mag carried the design and operating coverage. UFood / Oriental Daily — the Chinese-language food platform — published a long-form profile that walked Malaysian readers through the bouchon tradition itself, distinguishing it from brasserie and bistro.
The format placed Lyonnaise neighbourhood food in a Kuala Lumpur premier mall. It was the most architecturally generous register the kitchen had operated in: classical French pedigree at the front of the room, bouchon warmth at the table.

Nine Weeks (Late 2020 – January 2021)
Bouchon Enfin operated for nine weeks before the second Movement Control Order shut its doors in January 2021. The chapter is recorded in Sin Chew Daily (18 January 2021), which carried the chef’s account of the closure and the pivot decision: when the team realised the restaurant could not operate, the priority became feeding the city.
The kitchen had a choice. The choice it made is the chapter.
The Be Kind Pivot
Within one week of closure, the Bouchon Enfin kitchen pivoted to the Be Kind programme — preparing and distributing dinner packets to organisations and communities in need. The chapter is recorded across Yahoo Malaysia / News (Malaysian James Won fine dining chef launches Be Kind initiative), Robb Report Malaysia (Enfin × James Won — New Luxury Comfort Food Delivery Service), Sunshine Kelly (January 2021), Vulcan Post, and Sin Chew Daily.
Two registers ran in parallel. The Be Kind programme — feeding organisations and communities — operated at humanitarian register. The Robb Report Luxury Comfort Food Delivery Service — bringing Bouchon Enfin’s degustation discipline into private homes — operated at hospitality register. Both used the same kitchen. Both kept the team employed. Both honoured the same principle: the kitchen does not stop because the room is closed.

What the Chapter Argues
Bouchon Enfin’s chapter is not a closure story. It is a kitchen-character story. Across the restaurant lineage, every other chapter records what the kitchen did at its operating peak — the Krug Chef’s Table, the Hennessy Salon, the yōshoku discipline at Shin’Labo, the Mortlach Room. Bouchon Enfin records what the kitchen did when the operating peak was taken away.
The answer mattered then. It matters more now. The chef’s later pivot to conservation and culinary diplomacy work in 2025 — the Serumpun Sarawak movement, the post-restaurant register — is unimaginable without the precedent that Be Kind set during the pandemic. The kitchen learned, in those months, that the discipline could leave the room. The lesson never left.
The Continuing Register
Bouchon Enfin closed in 2021. The Lyonnaise bouchon register passed into historical record; the Pavilion Kuala Lumpur room was returned. What endured was Be Kind — a discipline of service that the kitchen has carried into every chapter since.
The next room the kitchen opened was Shin’Labo (2022 – 2025), in a different register, in a different mall, in a different language. The Be Kind posture travelled with it.
The room could not be saved. The principle could. The principle is what travels.
